Ugly Chocolate Cake
It was Friday night at 8:30 and I just had a panic attack, I had to have something CHOCOLATE, there was nothing in my usual stashes, OH NO! I think, almost sweating, what am I going to do? STOP IT! I'm OK, there is something I can do, but have been too lazy for years to make a scratch cake. I can't believe how easy it was to do, but as you can see in the picture, it just wasn't pretty, who cared? Not me, I was in a panic, just wanted to fix my craving. So I came up with a recipe that is sooo easy and moist, I will never buy a mix again. But to my demise I had no icing sugar to make for the top, what to do? I was not to be defeated tonight, said I! While I was looking for icing sugar, I remembered that I saw my electric coffee grinder, so I put in a couple of tablespoons of regular sugar in it, and it worked! Icing sugar! I was happy, so a bit of butter, some cocoa, instant coffee, vanilla, warm water and some of my fresh icing sugar and I was even happier! Within two hours, OK, maybe less, I was kickin it back with my Ugly Chocolate Cake.
Here's the recipe for the cake;
Preheat oven to 350 and grease, then lightly dust pan with flour.
2 cups sugar
1 3/4 cups all purpose flour
3/4 cup of unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup of milk
1/2 cup oil
2 teaspoons of vanilla extract
1 cup boiling water
Combine sugar, flour, cocoa, baking powder, baking soda, and salt together. Mix well.
Beat in eggs, milk, oil and vanilla until smooth, a couple of minutes, next add the boiling water while whisking, the batter will be thin, don't worry! Pour into pan and bake for about 30 - 35 min. You won't believe how this turns out, sooo moist and tasty. Nothing like a mix! Enjoy!
