Banana Breakuffin Recipe
Let me explain, everyone probably has had the recipe on the ripe banana bags from the grocery stores, when the produce manager, just orders too many banana's. You get them for a buck a bag,,,, great. Well, I have been doing that for a long time now. To tell you the truth, I just now got sort of tired of the recipe, but still like it. I was making some tonight and thought, hey, what can I do to make them a little different. So looking around, I saw about a cup of left over caramelized pecans, hummm, then I opened the fridge and saw to little half empty bags of chocolate chips and peanut butter chips, ohh, they looked like they just couldn't be separated, they had been in that little spot in the fridge together soooo long that I had to keep them together. So I grabbed the bag and started to follow the recipe, turn the oven to 350 degrees, grease the loaf pan, then cream a half cup of butter with 3/4 cup sugar in a mixer for a while, then add two eggs one at a time until light and fluffy then add 1 teaspoon of vanilla. Next sift together two cups of flour, 1 teaspoon salt, 1 teaspoon of baking soda, I also added 1 teaspoon of baking powder, a 1/2 teaspoon of allspice and a teaspoon of cinnamon as well. I mixed the dry ingredients together, then just before I folded it into the batter, I added 1 teaspoon of Brandy extract and 1 teaspoon of Maple extract. Then I folded in the dry ingredients, plus a half cup of the pecans, a half cup of each chocolate chips and peanut butter chips. I placed some caramelized pecan halve on top before I baked it as well. I baked it in the oven for about an hour. It was great, I wanted to put a picture of it on here, but I dug into it before I could think of it, sorry! Next time I will, I promise, well, I will try anyway! So, any way that is how I came up with the name, it's not just Banana Bread, it's not a Cake, nor a Muffin. Hence the Breakuffin was created, I think you will love it. I was going to call it the Banana Breake, but how would you pronounce the e at the end? So, I kept it simple. Try this one, I think you will love the change.
